These coconut cookies that I made reminded me of the coconut burfees that my Mom used to make when I was small. But the recipes are so different. I had a very simple recipe. Beat egg whites until they are nice and stiff.

Then add the coconut flakes and some sugar to it and beat it again.

Finally add the magic mixture
quark which will make your coconut cookies nice and soft.

Bake them until they are nice and golden brown.



Eat them when they last ;-)
